Weeknight Chicken Bowl

Chicken thighs, rice, cucumber, Greek yoghurt, lemon, fresh herbs (mint, parsley), olive oil, salt.

1) Cook rice. 2) Pan-fry seasoned chicken until golden. 3) Whisk yoghurt with lemon and herbs. 4) Slice chicken, assemble over rice, drizzle sauce.

Crispy Roast Potatoes

⏱ 45 min 👤 Serves 4

Floury potatoes (Sebago work great), neutral oil, flaky salt, garlic cloves, fresh rosemary.

1) Parboil chopped potatoes until edges soften. 2) Drain, shake in pot to rough up the edges. 3) Roast in very hot oil at 220°C for 35 min, turning once. 4) Finish with salt and rosemary.
